Visit of the new winery of Via della Stella, including a wine tasting. We will have a nice walk through the olive grove and the vegetable garden, accompanied by Chiara or a collegue. We will then take you to the new cellar where you will feel the place where our wines come to life. Followed by the tasting of wines and a small tasting of typical products of our land.

Wonderful winetasting experience in one of Italy's smallest wineries. You will be tasting four different wines and you will learn how they are made: - Mancius red wine IGT - Umbrone red wine IGT - White wine Umbria IGT - One red or white passito. You may also take a stroll in the vineyard.

We will cook the traditional dishes of Tuscany, Umbria, and Lazio together. Vegetarians or vegans can be accommodated. Our courses will be rich in flavor and taste and are very genuine, mostly using produce and herbs harvested from the garden. Lessons will be based on authentic cuisine taught to us by our moms and grandmothers. The recipes will be seasonal, because this area offers excellent culinary products. To start, I'll present the raw ingredients that we will use. We will start with a nice welcome snack or breakfast Rosso Montepulciano house wine, coffee, water included in the price. Then I'll show you different techniques for hand-making noodles, pies, dumplings, stuffed pasta, and pizza. You'll learn techniques for sauces, roasting, and different types of cooking. Then we'll all sit together at a table and celebrate our preparations with a wonderful five-course dinner immersed in nature. Other things to note We organize transfers.

YOU CAN REQUEST A DIFFERENT STARTING TIME AND DAY! We will start with a wine tasting, toasting to the cooking class. We will taste extra virgin olive oil and learn how to recognize a good olive oil from a bad one. Then we will make 3 kinds of pasta: one with flour and water, and another with eggs, and maybe a lasagna. Then we'll prepare the pasta sauces and make tiramisu. All cooking sessions are tailor-made. We will enjoy with wines, liquors, and some good background music and have lunch under the Tuscan sun. Kids are welcome! I have 2 labrador retriver at the villa. Durante la visita scoprirai come viene prodotto l'olio e quali sono le sue caratteristiche e curiosità. Poi sarai invitato al piano superiore nell'elegante sala degustazioni a tema oliva per assaporare i tre tipi di olio evo prodotti in abbinamento a delle bruschette e prodotti tipici, accompagnandoli con un buon calice di vino locale. Al vostro arrivo verrete accolti in azienda da Chiara che, durante una passeggiata che vi guiderà alle vigne, comincerà a parlarvi di come nasce questo prodotto, il Vinosanto da uve affumicate dell’Alta Valle del Tevere, Presidio Slow Food. Verrete avvolti dal verde delle campagne umbre, in una passeggiata che si snoderà fra tre diversi vigneti… Rientrando in azienda l'esperienza proseguirà nella Vinsantaia, luogo dove il tempo non esiste e la tradizione continua… qui, ogni anno, ad Ottobre le uve vengono appese con delle coppiole di cotone al soffitto e spremute a fine Febbraio. Giorni dopo, il mosto ricavato viene messo “a dimora” in caratelli di rovere dove ”incontra” la Madre, che rende il Vinosanto – prodotto da ogni famiglia - unico ed inconfondibile. Il mosto resterà nei caratelli per un minimo di 10 anni e, alla fine, si otterrà un nettare ambrato dal caratteristico sentore di affumicato. E la degustazione? Lasciatevi stupire da un insolito abbinamento: Vinosanto ed Erborinati! Vi proponiamo un aperitivo nel nostro oliveto, a poche centinaia di metri dallo splendido lago di Bolsena. Avrete occasione di passare qualche ora immersi nella natura tra i nostri olivi secolari, veri e propri monumenti naturali del territorio. Vi faremo conoscere la nostra tecnica di coltivazione raccontandovi ogni passo necessario alla produzione del nostro olio EVO "Cisterna31". Faremo poi una degustazione dell'olio, scoprendo i sapori e gli odori caratteristici della cultivar Caninese. Infine, assaggeremo alcuni dei migliori prodotti caratteristici della Tuscia tra cui salumi, formaggi, ortaggi, legumi, pesce di lago, vino e naturalmente pane e olio!

Guests will do a tutored tasting of the wines that are produced at Chiesa del Carmine. Wine and olive oil will be matched with our truffle products, homemade focaccia, local meat, cheese and vegetables from our garden. Please let us know if you have any dietary requirements and we will try to accomodate your needs. (I recommend that you should not eat before the tasting!) Walk maps of the valley can be provided upon request and visitors are welcome to stay after the tasting and enjoy a walk around the farm. Ci troveremo in scuderia e inizieremo con un introduzione sui cavalli che monterete, la cura e la pulizia. Dopo aver preparato i cavalli passeggeremo con loro attraverso le bellissime colline della valdichiana, attraverso boschi, uliveti e vigneti di una tenuta bellissima, che rende questa vista unica in tutto il mondo.
